A sourdough skillet meal is a great way to use up some sourdough discard and make a delicious dinner! This is a comfort dish that you can make so many variations of. It’s a one-stop nutritious meal with protein, healthy fats, complex carbs, and vegetables. No preservatives or inflammatory oils here. This meal is made with all whole foods and packs a powerful punch of flavors. The veggies, meat, and sourdough topping work so nicely together. It is definitely a meal idea you will keep coming back to. Not to mention, it is another wonderful example of how our sourdough starter serves us so well!

How to make a sourdough skillet meal
I’m happy to share that this meal is super easy to make with minimal prep time. When you don’t know what to make for dinner, choose this recipe! You can use whatever meat and veggies you have in your refrigerator while simultaneously using up some sourdough discard.
Scared of a sour taste? Don’t worry! I add honey and baking soda to help balance that out. The texture and flavor of the breading are incredible. It has a subtle crisp with a fluffy inside and an amazing savoriness.
Sautee your meat and veggies
- In your cast iron pan with some olive oil or ghee sautee your veggies on medium heat until their soft. Add your meat of choice and cook everything together for about 10 minutes.
- TIP: Sautee the meat and veggies separately and then mix them together to save some time!
Make your sourdough topping & bake
- To a medium-sized bowl, add Italian season, salt, baking powder, and baking soda and mix.
- Add your sourdough starter, melted butter, and eggs. Mix until everything is combined.
- Pour the mixture over the meat and veggie mixture and top with some grass-fed, freshly grated cheese. I recommend Kerrygold Dubliner cheese.
- Bake for 25 minutes at 400 degrees F and enjoy!
Can I make adjustments to my sourdough skillet meal?
Yes! Please alter it to your liking. Use whatever veggies and meat you like and you can make it dairy free! Just remove the cheese and butter, use olive oil instead, and 1/4 cup of nutritional yeast if desired. Frozen veggies work great in this meal as well!
Sourdough Skillet Meal
Equipment
- 1 10-12 inch cast iron skillet
- medium-sized mixing bowl
- Measuring cups and spoons
Ingredients
- 1 lb grass-fed ground beef
- 2 tablespoons ghee or olive oil
- 1 clove garlic chopped
- 1 medium yellow onion diced
- 1 green pepper diced
- 8 oz baby bello mushrooms chopped
- 8 grinds of black pepper
Ingredients for the sourdough topping
- 1/2 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 tablespoon honey
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1.5 cups sourdough starter discard
- 3 eggs
- 3 tablespoons melted butter
- 1/2 cup grass-fed cheese (dubliner, mozzerlla, swiss, etc.)
Instructions
- Preheat your oven to 400 degrees F.
- In your cast iron pan, add 1 tablespoon of ghee, and turn your heat to medium on the stove. Add your chopped onion, green pepper, and mushrooms and sautee for 5-8 minutes or until they start to soften. Remove them from the pan and set aside.
- Add another tablespoon of ghee and your chopped garlic. Add your beef and black pepper, ground up the meat, and cook for about 7 minutes. Then add your veggies back in and mix everything together.
- Turn your heat to low and allow everything to simmer together for about 5 minutes.
- While that simmers, make your sourdough topping.
- In a medium bowl add your Italian seasoning, baking powder, baking soda, and salt and mix.
- Add your sourdough starter, honey, melted butter, and eggs, and mix everything together until combined.
- Pour the mixture over the meat and veggie skillet mixture and top with grated cheese.
- Bake for 20-25 minutes or until the top starts to turn golden brown (if you like it crispy go for the full 25).
- Enjoy! This meal is seriously amazing!
- Any leftovers can be stored in an airtight container in your refrigerator for up to 3 days.
