In your cast iron pan, add 1 tablespoon of ghee, and turn your heat to medium on the stove. Add your chopped onion, green pepper, and mushrooms and sautee for 5-8 minutes or until they start to soften. Remove them from the pan and set aside.
Add another tablespoon of ghee and your chopped garlic. Add your beef and black pepper, ground up the meat, and cook for about 7 minutes. Then add your veggies back in and mix everything together.
Turn your heat to low and allow everything to simmer together for about 5 minutes.
While that simmers, make your sourdough topping.
In a medium bowl add your Italian seasoning, baking powder, baking soda, and salt and mix.
Add your sourdough starter, honey, melted butter, and eggs, and mix everything together until combined.
Pour the mixture over the meat and veggie skillet mixture and top with grated cheese.
Bake for 20-25 minutes or until the top starts to turn golden brown (if you like it crispy go for the full 25).
