If you’ve ever made a loaf of sourdough bread and ended up with some almost stale pieces, these three leftover sourdough bread recipes are for you! Each recipe is so easy and requires minimal prep work. And the result is absolutely delicious. From sweet to savory, it just goes to show how well sourdough bread can serve us and how you can make the most out of your loaf!

Recipe 1: Sourdough Bread Pudding

Sourdough bread pudding is a sweet dessert dish made by combining cut-up stale sourdough bread with eggs, sugar, milk, and spices. The mixture is then baked until golden and fluffy. It is sometimes topped with homemade syrup or cream and is best enjoyed right out of the oven. It is so rich and comforting, this is a great way to use leftover sourdough bread as the bread must be stale for this sweet treat! Brioche sourdough bread is the best bread to use for this dessert, but any sourdough bread will do.

How to make sourdough bread pudding

Ingredients & Equipments

  • 5-6 cups of stale sourdough bread cut into cubes
  • 4 cups of whole milk
  • 1 cup heavy cream
  • 1 cup sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • pinch of salt
  • powdered sugar for dusting (optional)
  • 1 9×13 baking dish
  • mixing bowl
  • measuring cups and spoons

Instructions:

  1. Preheat the oven to 350 degrees F and grease the baking dish with butter.
  2. Cut your bread into 1-inch cubes and spread it in the baking dish.
  3. Whisk together the milk, cream, sugar, eggs, vanilla, cinnamon, and salt in a mixing bowl.
  4. Then pour the mixture over the bread and let it soak for 10 minutes.
  5. Bake for 40-45 minutes or until the top turns golden brown.
  6. Dust with powdered sugar and desired toppings and serve warm.
  7. Enjoy!

Recipe 2: Sourdough Grilled Sandwich

Sourdough grilled sandwiches are a great way to use leftover sourdough bread! The rich, tangy flavor pairs wonderfully with a wide range of fillings. From classic cheese and ham to more adventurous combinations like roasted vegetables or pulled pork. Grilling the sandwich gives the bread a crispy, golden-brown crust while melting the cheese and heating up the fillings, creating a comforting, satisfying meal that’s perfect for lunch or a quick dinner.

My favorite kind of sourdough grilled sandwich is tomato basil pesto with various fillings. I’ll be providing what I use, but you can use anything you’d like for this recipe!

  • 4 slices of leftover sourdough bread
  • 2 tablespoons of mayo
  • 1/4 cup of basil pesto sauce
  • 1/2 of tomato sliced
  • 3-5 slices of fresh mozzarella
  • ham or turkey (optional)
  • 2 tablespoons of avocado or olive oil
  • 1 medium frying pan or skillet

Instructions

  1. Heat 2 tablespoons of avocado oil on medium heat in your skillet.
  2. Spread the mayo on the outer part of the sourdough bread slices and fill your sandwich with the basil pesto sauce, tomato, mozzarella, and meat if using.
  3. Place the sandwiches in the pan and fry on each side for 3-5 minutes or until they start to brown.
  4. Serve and enjoy!

Recipe 3: Sourdough Bruschetta

Sourdough bruschetta is a delicious and great option for using up leftover sourdough bread. Firstly, sourdough bread pairs perfectly with the fresh, bright flavors of ripe tomatoes, fragrant basil, and garlic. The bread is toasted until crispy on the outside and still soft on the inside, providing the perfect texture to hold the juicy toppings. Bruschetta is also incredibly versatile, as it can be customized with different toppings, such as mozzarella, prosciutto, or olives, to suit your tastes. Sourdough bruschetta is a tasty and easy way to transform leftover bread into a satisfying appetizer or snack that’s bursting with flavor.

  • 5-6 slices of leftover sourdough bread
  • 2 tomatoes diced
  • 2 garlic cloves minced
  • 1/4 cup fresh basil leaves chopped
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F and line your baking sheet with parchment paper.
  2. Slice the sourdough bread into 1/2-inch thick pieces and place on the baking sheet.
  3. Then, brush each slice with olive oil and place in the oven for 5-7 minutes.
  4. Meanwhile, in a small mixing bowl combine the tomatoes, garlic, basil, olive oil, and salt and pepper. Mix well.
  5. Once the bread is done, spoon the tomato mixture onto each slice.
  6. Optional: top each with some fresh mozzarella.
