Prepare the pan. Line an 8×8-inch or 9x9 inch baking pan or dish with parchment paper, leaving an overhang on the sides for easy removal.

Make the base. In a large mixing bowl, combine the almond flour, vanilla protein powder, and sea salt. Add the maple syrup, vanilla extract, and melted coconut oil, then stir until a soft dough forms.

Press into the pan. Transfer the mixture to the prepared pan and press it into an even layer using the back of a spoon, an offset spatula, or your hands. If it is not coming together, add a little more maple syrup or coconut oil.

Add the caramel. Spread 1 batch (about 320 g) of my Homemade Date Caramel Sauce evenly over the chilled base.

Sprinkle on the peanuts. Evenly scatter the chopped roasted salted peanuts over the caramel, gently pressing them into the surface so they stick.

Make the chocolate topping. Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth and fully melted.

Finish the bark. Pour the melted chocolate over the peanut layer and spread into an even layer. If desired, sprinkle with flaky sea salt.

Chill. Refrigerate for 1–2 hours, or until the chocolate is completely set and the bark is firm.

Slice and serve. Lift the bark out of the pan using the parchment paper, then cut into squares or bars with a sharp knife. Enjoy straight from the refrigerator, or let it sit at room temperature for a few minutes before serving for a softer bite.
