Ingredients

Date peanut butter layer

  • 250 grams pitted Medjool dates
  • 100 grams natural creamy peanut butter
  • 40 grams vanilla protein powder
  • 5 grams vanilla extract
  • 1 gram fine sea salt
  • 15-20 grams maple syrup (optional )
  • 15-30 grams water (as needed)
  • 30 grams chopped peanuts

Chocolate Topping

  • 170 grams dark or semi-sweet (chocolate chips)
  • 10 grams coconut oil
  • flaky sea salt (optional)

Instructions

  1. Line a 24-cup mini muffin pan with paper liners or use a silicone mini muffin pan.
  2. Prepare the dates: Add the Medjool dates to the bowl of a food processor and process until they form a sticky paste, stopping to scrape down the sides as needed.
  3. Make the filling: Add the peanut butter, vanilla protein powder, vanilla extract, and salt. Process until the mixture comes together into a thick, cohesive dough. If it seems too dry or crumbly, add water 1 teaspoon at a time until the mixture holds together when pressed. If using maple syrup, blend it in at this stage.
  4. Fill the muffin pan: Divide the mixture evenly between the cups of a 24-cup mini muffin pan (silicone works best). Press each portion down firmly with the back of a spoon or your fingers to create an even layer.
  5. Add the peanut layer: Sprinkle the chopped peanuts evenly over the top of each bite, gently pressing them into the date mixture so they stick.
  6. Make the chocolate topping: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring well between each, until smooth and fully melted.
  7. Top the bites: Spoon the melted chocolate evenly over each bite, spreading it into an even layer over the peanuts. Finish with a sprinkle of flaky sea salt, if desired.
  8. Chill and enjoy: Refrigerate for 30–45 minutes, or until the chocolate is completely set. Once firm, remove the bites from the pan and enjoy! Store leftovers in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
