Ingredients

The filling

  • 250 grams creamy or crunchy natural peanut butter
  • 30 grams vanilla protein powder
  • 40 grams maple syrup
  • 5 grams vanilla extract
  • 1 gram fine sea salt

Chocolate Coating

  • 180 grams dark or semi-sweet chocolate chips (Lily's brand is amazing)
  • 12 grams coconut oil

Instructions

  1. To a mixing bowl add the peanut butter, protein powder, maple syrup, vanilla extract, and salt until completely smooth. Chill for 15-20 minutes.
  2. After the rest, scoop about 1 tablespoon of dough (18 grams) and roll it into a ball (there will be about 17-18 bites).
  3. Freeze the peanut butter balls for 15-20 minutes for easier handling.
  4. While the bites are chilling, melt the chocolate and coconut oil together in a small sauce pan over low heat until completely smooth.
  5. Dip each peanut butter ball into the chocolate, lift using a fork to allow excess chocolate to drip off. Place the balls on a parchment-line tray and sprinkle with flaky sea salt if desired.
  6. Freeze the protein bites for 30 minutes to 1 hour or until the coating sets.
  7. Store the peanut butter protein bites in an airtight container in the fridge for up to 1 week. The chocolate coating and peanut butter filling stay firm and make the perfect for grab and go snacking.
  8. For longer storage freeze the bites in a freezer safe container for up to 3 months.
