After the rest, scoop about 1 tablespoon of dough (18 grams) and roll it into a ball (there will be about 17-18 bites).

Freeze the peanut butter balls for 15-20 minutes for easier handling.

While the bites are chilling, melt the chocolate and coconut oil together in a small sauce pan over low heat until completely smooth.

Dip each peanut butter ball into the chocolate, lift using a fork to allow excess chocolate to drip off. Place the balls on a parchment-line tray and sprinkle with flaky sea salt if desired.

Freeze the protein bites for 30 minutes to 1 hour or until the coating sets.

Store the peanut butter protein bites in an airtight container in the fridge for up to 1 week. The chocolate coating and peanut butter filling stay firm and make the perfect for grab and go snacking.
