Ingredients

  • 2 tablespoons olive oil or avocado oil
  • 1 lb ground turkey (preferably pasture-raised)
  • 1 pack of desired taco seasoning
  • 2 bell peppers (diced)
  • 1 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 8-10 large butter lettuce leaves
  • 1/2 cup fresh cilantro (chopped)
  • 1 cup cherry tomaoes (halved)
  • salsa or guacamole (for topping (optional))

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Next, add the garlic and onions and saute for 1-2 minutes.
  3. Then add the bell peppers and saute for another 3-5 minutes.
  4. Add the ground turkey, mash it up and cook until browned (10-12 minutes).
  5. Then pour 1/4 cup of water into the pan and add your taco seasoning (start with half the pack) stirring to make sure everything is coated.
  6. Allow the mixture to simmer on low for 8-10 minutes mixing it a few times. Give it a taste test and add the rest of the taco seasoning if desired.
  7. Lastly, spoon the mixture into the lettuce leaves and top with cilantro, tomatoes, and guacamole or salsa (or both!).
  8. Any leftovers can be stored in an airtight container for 3-4 days in the refrigerator.
