Spicy Arrabbiata Sauce (over zoodles)

Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic (chopped)
  • 1 small yellow onion (diced)
  • 1 28 oz can of crushed tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon oregano
  • 1/4 cup fresh basil leaves (chopped)
  • 2-3 medium zucchinis (if making zoodles) (spiraled )

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Add the red pepper flakes and garlic and cook for 2 minutes.
  2. Next, add the diced onion and cook for 5 minutes or until the onions become translucent.
  3. Add the crushed tomatoes, salt, pepper, and oregano, and stir to combine.
  4. Allow the sauce to simmer for 15-20 minutes or until it has thickened and reduced.
  5. While the sauce is simmering, spiralize 2-3 medium zucchinis (keep the skin on) using a spiral vegetable slicer.
  6. Lastly, stir in the chopped basil to the sauce and simmer for 2 more minutes.
  7. Serve over fresh zoodles and top with chopped parsley if desired and enjoy!
  8. Spicy arrabbiata sauce with zoodles can be stored in an airtight container in the refrigerator for up to 3 days.
