Ingredients

  • 250 grams creamy or crunchy natural peanut butter
  • 30 grams vanilla protein powder
  • 50 grams pure maple syrup
  • 5 grams vanilla extract
  • 1 gram fine sea salt
  • 60 grams mini chocolate chips (dark or semi-sweet)

Chocolate coating

  • 170 grams dark or semi-sweet chocolate chips ((Lily’s brand is amazing))
  • 10 grams coconut oil
  • flaky sea salt (for topping)

Instructions

  1. Line a 24-cup mini muffin pan with paper liners or use a silicone mini muffin pan.
  2. In a medium bowl, stir together the peanut butter, protein powder, maple syrup, vanilla, and salt until completely smooth. If it is overly sticky add a little extra protein powder or chill the dough for 20-30 minutes.
  3. Fold in the mini chocolate chips.
  4. Portion about a tablespoon or 16 grams of dough into each mini muffin cavity, pressing it down to fill the cup.
  5. Melt the chocolate chips with the coconut oil in 20-second intervals stirring until smooth.
  6. Spoon about half a tablespoon over each peanut butter bite and gently tap the pan so the chocolate settles into an even layer.
  7. Sprinkle with flaky sea salt if desired and refrigerate for 30-45 minutes or until the chocolate is completely set.
  8. Store in the refrigerator for up to one week or freeze up to 3 months.
