Equipment

  • Mixing bowls/spoons
  • Food scale & measuring cups and spoons
  • 24 cup muffin pan or silicone pan

Ingredients

  • 170 grams superfine blanched almond flour
  • 30 grams vanilla protein powder
  • 1/4 teaspoon fine sea salt
  • 80 grams pure maple syrup
  • 2 teaspoons vanilla extract
  • 50 grams melted refined coconut oil
  • 60 grams mini chocolate chips

Chocolate Topping

  • 180 grams dark or semi sweet chocolate chips (Lily’s brand is amazing)
  • 2 teaspoons coconut oil
  • flaky sea salt for topping

Instructions

  1. Line a 24-cup mini muffin pan with paper liners or use a silicone mini muffin pan.
  2. In a medium bowl, whisk together the almond flour, protein powder, and salt.
  3. Add the maple syrup, vanilla, and melted coconut oil. Stir a bit and then fold in the mini chocolate chips. If the dough feels too wet, add a little more flour. If it feels too dry add a teaspoon of milk at a time.
  4. Portion about a tablespoon or 16 grams of dough into each mini muffin cavity, pressing it down to fill the cup.
  5. Melt the chocolate chips with the coconut oil in 20-second intervals stirring until smooth.
  6. Spoon about half a tablespoon over each cookie dough bite and gently tap the pan so the chocolate settles into an even layer. If there is any extra chocolate evenly disperse it over each cookie bite.
  7. Sprinkle with flaky sea salt if desired and refrigerate for 30-45 minutes or until the chocolate is completely set.
  8. Store in the refrigerator for up to one week or freeze up to 3 months.
