Ingredients

  • 250 grams pitted Medjool dates
  • 20 grams refined coconut oil (melted)
  • 25 grams pure maple syrup
  • 25 grams  black cocoa powder (or dutch processed cocoa)
  • 25 grams dutch process (cocoa )
  • 30 grams chocolate protein powder
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract
  • 1/4 teaspoon espresso powder (optional but enhances chocolate flavor)
  • 3/4 teaspoon fine sea salt
  • 40-50 grams mini chocolate chips (dark or semi-sweet)
  • 1-2 teaspoons water as needed

White chocolate drizzle (optional)

  • 80 grams white chocolate (melted)
  • 1 teaspoon coconut oil

Instructions

  1. Prepare the dates: If your Medjool dates feel dry, soak them in warm water for 5–10 minutes, then drain and pat dry.
  2. Blend the ingredients: Add the Medjool dates, melted refined coconut oil, maple syrup, black cocoa powder, Dutch-process cocoa powder, chocolate protein powder, vanilla extract, almond extract, espresso powder, and salt to a food processor. Blend until the mixture comes together into a thick, sticky dough, stopping to scrape down the sides as needed.
  3. Adjust the consistency: If the mixture seems too dry, add water 1 tablespoon at a time until it holds together when pressed. If it's too sticky, refrigerate the mixture for 30–60 minutes before rolling.
  4. Fold in the chocolate chips: Transfer the mixture to a bowl and gently stir in the mini chocolate chips until evenly distributed.
  5. Roll into balls: Using a small cookie scoop or tablespoon, portion the mixture and roll into balls. Place them on a parchment-lined baking sheet or plate.
  6. Chill: Refrigerate the date balls for at least 20–30 minutes to firm up.
  7. Make the white chocolate drizzle: Melt the white chocolate and coconut oil together in the microwave in 20-second intervals, stirring between each, until smooth.
  8. Decorate: Drizzle the melted white chocolate over the chilled date balls. Return them to the refrigerator for 10–15 minutes, or until the chocolate has set.
  9. Serve and enjoy: Store the date balls in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
