Ingredients

  • 180 grams pitted Medjool dates
  • 120 grams milk of choice, warmed (plus more as needed)
  • 5 grams vanilla extract
  • 1 gram fine sea salt

Instructions

  1. Add the dates to a bowl and cover with very hot water. Let soak for 10 minutes, then drain well.
  2. Add the softened dates, warm milk, vanilla, and salt to a high-speed blender.
  3. Blend until completely smooth and creamy, scraping down the sides as needed.
  4. For a thinner, more drizzle-able caramel, blend in additional milk 10–15 g at a time until it reaches your desired consistency.
  5. Transfer to a jar and refrigerate. The caramel will thicken as it chills.

    Tip: Warm it for a few seconds before serving if you want that gorgeous, pourable caramel consistency.
