Ingredients

  • 250 grams pitted Medjool date
  • 20 grams pure maple syrup
  • 65 grams creamy natural peanut butter
  • 30 grams dutch processed cocoa powder
  • 1/4 teaspoon espresso powder (optional but enhances chocolate flavor)
  • 15 grams ground flaxeed or chia seeds
  • 5 grams vanilla extract
  • 1/4 teaspoon fine sea salt
  • 40 grams chopped walnuts, cashews, or pecans
  • 50 grams mini chocolate chips (dark or semi sweet)
  • 1-2 tablespoons water (as needed)

Instructions

  1. Add the dates, maple syrup, peanut butter, cocoa powder, espresso powder (if using), flaxseed, vanilla, and salt to a food processor.
  2. Process until smooth and sticky. If the mixture seems too thick or your dates are on the dry side, add 1 tablespoon of water at a time until it comes together.
  3. Pulse in the chopped nuts and mini chocolate chips until evenly distributed.
  4. Scoop and roll about 18-20 balls (roughly 25-28 grams each).
  5. Refrigerate for 30 minutes to firm up before serving.
  6. Store in the refrigerator for up to 1 week or freeze for up to 3 months.
